If you’ve bought the add-on pack, should you always use the ‘Plus’ versions of the included stacks?

No - they should really just be used when required.

Container Plus is required if you want custom backgrounds (images etc), responsive widths, positioning, padding, margins etc.

The regular Container stack will do you 90% of the time I’d reckon. It’s a lot lighter in code so best using that when the Plus features aren’t required.

The Grid stack is great for equal width columns. If you want unequal columns (or other advanced layout options) then you need to use Grid Plus.
